Ingredients for Crispy Parmesan Chicken
- Chicken breast- Ok, I know this one is obvious, but I have to mention it. Cut the chicken breast lengthwise, put it in either a plastic bag or plastic wrap, and pound it with a meat mallet until it has a similar thickness throughout.
- Bread crumbs- You can totally use store-bought bread crumbs for this, but if you want to take it up a notch, you can make your own bread crumbs.
- Parmesan cheese- It’s best to grate your own parmesan for this recipe.
- Eggs- This is to make the bread crumb topping stick to the chicken.
- Spices- Oregano and garlic powder add a nice flavor to the dish.
How to Make Crispy Parmesan Chicken
Step 1
Cut the chicken breasts in half lengthwise. Either wrap the pieces in plastic wrap or put them in a plastic bag. (I prefer to use a plastic bag because it’s easier.) Pound the chicken with a meat mallet until it’s more or less even throughout. Generously season the chicken with salt and pepper on both sides.
Step 2
In a wide-bottomed bowl, mix together the bread crumbs, grated parmesan cheese, salt and pepper, and other spices. (You just need to be able to fit the chicken pieces in the bowl for coating.) In another dish, whisk the eggs until the yolks and whites are combined. Now you’re ready to coat the chicken.
Step 3
Heat up a small amount of cooking oil or butter in a frying pan over medium heat.
Dip both sides of the chicken into the beaten eggs. Transfer it to the breadcrumb mixture and coat the chicken until you don’t see any bare spots. Repeat this process by coating the piece of chicken with the egg mixture again, followed by another round of bread crumbs. Once the chicken is double-coated, you can place it in the heated frying pan. Continue with the rest of the pieces of chicken.
Step 4
Once the first side of the chicken is golden brown, gently loosen it from the bottom of the pan and flip it. Continue cooking until both sides are golden and crispy. Make sure not to overcook, though, because that will make the chicken tough and dry. Continue adding in more cooking oil if the bottom of the pan is getting dry. This helps the chicken brown.
