I’ve heard of a lot of people who don’t like vegetables. This is a strange phenomenon to me because I adore vegetables. They’re definitely my go-to, guilt-free snack. Actually, my husband always laughs and tells me I’m a rabbit because of all the raw vegetables I munch on. As you can tell, he doesn’t quite share the same level of endearment as I have toward vegetables. Don’t get me wrong, he’ll usually eat vegetables. He’s just not normally that impressed by them. Every once in a while I can come up with something that actually surprises him though. These baked glazed carrots did just that!
These honey butter carrots are super simple to make. You just have to make a butter mixture, coat the carrots, and let them roast! Oh, and don’t forget the parmesan. I don’t think I’ve ever seen baked carrots with honey that include parmesan, but, actually, the two mix together quite well. It adds that much more flavor.

Ingredients for Baked Glazed Carrots
- Carrots- Well, this one is pretty obvious. I peeled my carrots. I would also recommend chopping off the bottoms of the carrots as well. I just left mine because I thought they looked more aesthetic that way.
- Butter- The secret to making pretty much anything taste better is some kind of fat- and a lot of it.
- Honey- These carrots actually use two kinds of sweeteners. I think this helps to add some depth of flavor.
- Brown sugar- This is the other sweetener. Of course, brown sugar really just makes anything taste better 😄.
- Parmesan cheese- This adds just a little bit extra flavor to these sweet carrots.

How to Make Baked Glazed Carrots
Step 1
Preheat your oven to 400°F. Start by melting your butter in a small saucepan. Once the butter has melted, turn the heat down as low as it can go. Add the honey, mixing it into the butter as it dissolves. Next, stir in the brown sugar and salt. Turn off the heat.
Step 2
Coat the peeled carrots in the butter mixture. I did this by putting the carrots on a tray and pouring the mixture over them, rolling them around in it. Put the carrots on a baking-paper-lined tray. Pour the remaining butter mixture over the top of the carrots.
Step 3
Put the tray into the oven. Let the carrots cook for 30-45 minutes, depending on the size of your carrots. About 5 minutes before they’re done, take the tray out of the oven and add the parmesan cheese. To ensure the carrots are done, poke them with a fork to see if they’re tender.

How long do carrots take to bake?
Well, the answer to this question really depends on the size of your carrots. Baby-cut carrots usually take around 20 minutes to cook, while larger carrots can take 30 minutes or longer. The best test to know if your carrots are done is to spear them with a fork to check for tenderness.
Do you peel carrots before roasting?
Personally, I chose to peel mine. This is really up to you, though. There’s nothing dangerous about eating carrot peel. Actually, a lot of times, I choose not to peel my carrots. It depends on how lazy you’re feeling that particular day 😂.
Why are my carrots still hard after roasting?
This can be because you did not roast the carrots long enough. Either that or you have some big, stubborn carrots. You can try covering them with aluminum foil to help speed up the process. Make sure to take it off at the end, though, to help brown them.
